
1 head cauliflower, separated into flowerets
1 large carrot cut in strips
4 stalks celery, cut into slices or strips
½ head broccoli, separated into flowerets
½ pound fresh mushrooms (I always use extra)
1 pack cherry tomatoes
2 cloves garlic, minced
½ cup vegetable oil
1 ½ cups red wine vinegar
1/3-cup sugar
2 teaspoons prepared mustard
2 teaspoons salt
1 teaspoon oregano leaves
Black pepper to taste
Prepare vegetables. Mix marinade with the remaining ingredients and pour over vegetables. Cover and chill at least 12 hours, turning occasionally. Eat right out of the bowl or To serve, drain well and garnish as desired.
