March 20th International Day of Happiness and dang there is so much to be happy about today.
Today is the 79th day of the year, March Equinox is at 6:29am, The First Day of Spring, International Earth Day, Extraterrestrial Abductions Day, Proposal day, World Sparrow Day, Charles’, Kate Marie’s & Mr. Roger’s Bday …….
OH MY – So what makes me really happy?
Nothing makes me smile and do a little twirl more than a fresh squeezed lemonade over “good” crushed ice. Therefore I celebrate this glorious day with lemons & lemonade.
My favorite plant in our home is my lemon tree my Mom gave me. Â I have been known to over-indulge in Pink Lemonade Cake Squares from Dewey’s Bakery, lemon drop candy, lemon fluff, lemon bars, sugared lemon peel, Avgolemono (Greek lemon soup), Preserved lemons, lemon curd …
Mainly, I just plain out love lemonade. Ask my Niece & Nephew – they claim I am a bit obsessed. It is my beverage of choice. I will take it anyway I can get it but I prefer fresh squeezed with extra extra lemon. Go figure – it is odd that something that makes you pucker and contort your face into all kind of funny ways — is so darn good and makes me so darn happy!
I have a weird good luck theory that if I have a large lemonade with extra lemon during a sporting event – my team will win. HA there is a hotdog and pretzels involved in this theory as well but that is for another blog.
Needless to say, I brake for and am a proud supporter of all lemonade stands. We had so much fun with our first lemonade stand as kids – we even made the paper.

LEMONADE
1 ¾ Cup sugar
1 ½ cup fresh squeezed lemon juice
8 cups water
AMAZING ADDITION: 1 drop of lavender, peppermint or basil Young Living Essential Oil. Fresh herbs to match as garnish.
Make a simple syrup – combine sugar and 1 cup water. Bring to boil and stir sugar dissolves.. Allow to cool then cover and refrigerate until chilled.
Strain the lemon juice. Remove seeds but the leave pulp. Stir together the simple syrup, lemon juice and remaining 7 cups water. Add-in one of your flavor options.
Voila – Happiness Does Happen! Take a Swig – then Grin BIG & do the Marchie Dance.
